Preheat oven to 425°F. Place fish on parchment paper-lined baking sheet and brush with half of the oil. Sprinkle with curry powder and gently massage it into fish; season with salt and pepper. Bake until fish flakes easily with fork, 10 to 12 minutes.
Meanwhile, in large heatproof bowl, combine couscous, apricots and spices. Season with salt and pepper. Stir in boiling water, cover and let stand for 5 minutes. Fluff with fork; stir in remaining oil.
Divide couscous among plates. Top each with fish and sprinkle with almonds, and parsley, if using. Serve with lemon wedges, if using.
