Roasted Broccoli Salad with Orange & Ginger

Method

Preheat oven to 400°F. In small bowl, stir together oil, vinegar, maple syrup, ginger, hoisin sauce, soy sauce, garlic, orange zest and juice. Season with salt and pepper; set aside.

Using vegetable peeler, peel stems of broccoli; cut each head into 8 wedges. On parchment paper-lined baking sheet, toss broccoli wedges with half of the reserved dressing. Roast, turning halfway through cooking time, until broccoli is golden brown and tender but still crunchy, about 20 minutes. Place broccoli on serving platter. Garnish with orange segments; drizzle with remaining vinai­grette. Sprinkle with pine nuts, basil and green onions.
