In pot of boiling salted water, cook pasta until tender-firm, about 8 minutes, or according to package instructions; drain well, reserving 1/4 cup (50 mL) of the pasta water. Return pasta to pot.Meanwhile, in large skillet, heat oil over medium-high heat; cook onion until softened, about 5 minutes; stir in garlic, pepper flakes, thyme, salt and pepper; cook for 1 minute. Add spinach and cook, stirring, until wilted and liquid evaporates, about 5 minutes. Add to pasta, tossing well.
Add Cottage cheese and lemon juice; toss to coat, adding pasta water if desired.
