Method

In mini food processor or blender, grind dried mushrooms to a powder. Transfer to bowl; stir in ground coffee beans, peppercorns and garlic powder. Set aside.

Drizzle balsamic glaze over steaks. Using your hands, rub glaze into steaks until evenly coated. Rub steaks on both sides with reserved mushroom-coffee dry rub. Set steaks aside in refrigerator for at least 1 hour.

In large cast-iron skillet, heat oil over high heat. Add steaks, one or two at a time, and cook, turning halfway through cooking time, until desired doneness, about 6 minutes for medium-rare. Transfer steaks to serving board; tent loosely with foil. Repeat with remaining steaks. Slice steaks and serve with French fries, if desired, Whiskey Cream Sauce and Apple & Cheddar Romaine Salad.
