In large cast-iron or nonstick skillet over medium-high heat, heat 2 tbsp of the oil. Sear pork chops, turning halfway through cooking time, until browned, 4 to 6 minutes; season with salt and pepper. Transfer pork to plate and tent with foil.
In same skillet, heat remaining oil over medium-high heat. Cook mushrooms, stirring constantly, until starting to brown, 4 to 5 minutes. Add garlic and shallot; cook, stirring often, 1 to 2 minutes. Stir in cream; season with salt and pepper. Reduce heat to medium and return pork chops (along with any cooking juices on the plate) to skillet. Spoon sauce over pork; cook until pork chops are warmed through, and sauce is thickened slightly, 1 to 2 minutes. Sprinkle with rosemary, if using.
