Method

Pork Patties In bowl, combine ground pork, bacon, garlic and steak spice; season with salt and pepper. Mix and form into 4 patties. Set aside in refrigerator.

Gribiche Sauce In bowl, combine egg, Dijon, shallot, capers, tarragon, chives, parsley and mayonnaise. Season with salt and pepper. Set aside.

Burgers Preheat barbecue to medium heat (about 350°F); grease grill.

Place reserved Pork Patties on grill and cook, turning halfway through grilling time, until internal temperature reaches 160°F, 8 to 12 minutes. Transfer patties to plate, top each with cheese slice and tent with foil. Let stand for 3 to 5 minutes.

Meanwhile, place buns on grill; cook, turning halfway through grilling time, until buns are toasted, about 4 minutes.

Spread bottom halves of buns with Gribiche Sauce; top each with watercress, Pork Patty, pickle slices, bacon, onions and more watercress. Top with top halves of buns.
