Preheat oven to 350°F. Grease 9- x 5-inch loaf pan. In small bowl, combine bread and milk; let stand for 5 minutes.
Meanwhile, in large bowl, using hands, combine pork, onion, celery, apple, egg, cheese, relish and thyme. Add bread-milk mixture, mixing until combined. Season with salt and pepper.
Press pork mixture into prepared loaf pan. Place on baking sheet and bake until instant-read thermometer inserted in centre of meatloaf reads 160°F, about 70 minutes. Let rest for 5 minutes before unmolding and cutting into slices. (Make-ahead: Can be stored in airtight container and refrigerated for up to 3 days or frozen for up to 3 months.)
