Peanut Noodles

Method

In saucepan of boiling salted water, cook noodles according to package directions. Reserve 1 cup of the cooking water; drain noodles and set aside.

Meanwhile, in bowl, whisk together peanut butter, hoisin sauce and 2/3 cup of the reserved cooking water; set aside.

In wok or large nonstick skillet, heat oil over medium heat. Add coleslaw; cook, stirring often, until vegetables are softened, 3 to 4 minutes.

Add reserved noodles and sauce to wok. Using tongs, toss noodles and coleslaw to coat until noodles are reheated, 2 to 3 minutes. Add some of the remaining cooking water if sauce seems too thick. Season lightly with salt and pepper. Sprinkle with green onions, and peanuts, if using.
