Method
In large saucepan, melt butter over medium heat. Add onions and cook, stirring often, until light golden, about 5 minutes.
Stir in cinnamon, turmeric and bay leaf. Stir in rice, 5 cups water and the salt. Reduce heat to low, cover and cook for 13 to 15 minutes; remove from heat. Stir in almonds and peas; season with pepper. Cover and let stand until rice is very tender, 3 to 5 minutes. Discard bay leaf; sprinkle with parsley and dill before serving.
