In large skillet, heat oil over medium-high heat. Add pancetta; cook, stirring, 2 minutes. Add shallot; cook until softened, about 3 minutes. Add mushrooms; cook, stirring occasionally, until golden, about 5 minutes. Season with salt and pepper.
Meanwhile, in large saucepan of boiling salted water, cook orzo until al dente, 6 to 8 minutes. Reserving 1/2 cup cooking liquid, drain pasta and return to pot. Add reserved mushroom mixture, spinach, lemon juice and reserved cooking liquid; toss to evenly coat pasta.
Divide orzo among plates. Sprinkle with goat cheese, pine nuts and chives.
