In bowl, stir together orange zest and juice, garlic, ginger, brown sugar, soy sauce, oil and Marsala. Divide marinade between 2 large resealable bags and add 2 or 3 hens to each bag. Marinate in refrigerator for at least 12 hours.
Preheat oven to 350°F; line baking sheet with parchment paper. Transfer hens to prepared baking sheet (pour marinade into bowl). Bake hens on upper rack of oven, brushing with reserved marinade every 10 minutes, until hens reach internal temperature of 165°F, 45 to 55 minutes. Transfer hens to serving plates and serve with roasted Brussels sprouts and orange wedges, if desired.
