Method
Marinated Flank Steak: In resealable plastic bag, mix together wine, oil, vinegar, garlic and rosemary; add steak and refrigerate for 30 minutes to marinate.Remove steak from marinade; sprinkle with salt and pepper. Place on greased grill over medium-high heat; close lid and grill, turning once, until medium-rare, about 10 minutes. Transfer to cutting board and tent with foil; let stand for 5 minutes before thinly slicing across the grain.
Meanwhile, in skillet, heat oil over medium-low heat; cook onion, salt, pepper and sugar until caramelized, 20 minutes.
Whisk mayonnaise with pepper sauce; spread on buns. Sandwich steak, onions and arugula in buns.
