Method
In small bowl, whisk together maple syrup, apple juice and vinegar. Set aside.
Season pork chops with salt and pepper. Grease baking sheet. In large skillet, heat oil and butter over mediumhigh heat. Add garlic and ginger; cook for 2 minutes, stirring occasionally. Add pork chops and cook, until golden on each side, turning halfway through cooking time,about 4 minutes. Place chops on prepared baking sheet. Set aside.
Preheat oven to 400°F. In same skillet, add sweet potatoes and onion. Reduce heat to medium and cook, stirring occasionally, until lightly browned, about 6 minutes. Transfer to baking sheet with pork chops. Pour reserved maple mixture over pork and vegetables; turn to coat.
Bake until pork chops are still slightly pink in centres and sweet potatoes are tender, 10 to 12 minutes. Remove from oven, tent with foil and let rest for 5 minutes. Drizzle each portion with glaze from pan.
