Method

Preheat oven to 400°F. In large bowl, toss sweet potatoes with half of the melted butter. Add ginger, maple syrup, sambal oelek and sesame seeds and toss again. Season with salt and pepper.

Grease 8-inch round baking dish. Place sweet potato slices on their sides around edge of dish, creating tight circle. Arrange remaining slices in centre, creating rosette. Bake, brushing with remaining butter every 15 minutes during baking time, until cooked through, 45 to 55 minutes.
