Get the recipes: The Ultimate Burger Buns and Pickled Beets
In small bowl, stir together yogurt, feta, 3 tbsp of the mint, lemon juice and garlic until combined; set aside.
In bowl, gently mix together lamb, oregano, salt and remaining 1 tbsp mint just until combined. Shape into four 4-inch wide patties.
Place patties on grill; close lid and cook, flipping once, until instant-read thermometer inserted sideways into patties reads 160°F, about 5 minutes.
Spread half of the yogurt mixture onto bottom halves of buns; top with patties, Pickled Beets (if using), remaining yogurt mixture and microgreens. Sandwich with top halves of buns. Thread 1 peperoncini (if using) onto each of 4 toothpicks; skewer tops of buns.
Makes 4 burgers.
