Preheat oven to 400°F. Line large baking sheet with parchment paper; set aside.

In large bowl, stir together soy sauce, sesame oil, mirin, sugar, gochujang and garlic. Set aside half of the marinade in small bowl. Add chicken drumsticks to large bowl; toss to coat.

Place drumsticks about 1 inch apart on prepared baking sheet. Bake on top rack of oven for 15 minutes.

Remove from oven and add broccolini and bok choy to baking sheet. Drizzle vegetables with half of the reserved marinade and brush chicken with more of the remaining marinade. Bake for 10 minutes; add mushrooms, if using, and brush chicken with marinade again. Bake for 10 minutes. Set oven to broil. Broil for 2 minutes to caramelize marinade. Transfer to serving dish and sprinkle with sesame seeds and green onions.
