Method

Preheat oven to 425°F. In bowl, stir together mustard, honey, garlic and chili peppers; season with salt and pepper. Place chicken in baking dish; baste with mustard mixture. Add broth. Bake until chicken is no longer pink inside, about 20 minutes. (Broil during last few minutes of cooking time to crisp skin, if desired.) Sprinkle with parsley and serve with Spicy Cucumber Salad.

 

 

🥒 Spicy Cucumber Salad Crush 3 to 4 mini cucumbers with back of chef’s knife. Slice cucumbers and place in bowl. Add 1 tbsp each toasted sesame oil and seasoned rice vinegar, 1 tsp each sesame seeds and maple syrup, and pinch hot pepper flakes. Mix well. Makes 4 servings.

 If you can’t find boneless, skin-on chicken thighs at the supermarket, ask the butcher to prepare them for you. You can also make this recipe with boneless, skinless chicken thighs.
