In large deep skillet, melt butter over medium heat. Add leeks, cover and cook, stirring occasionally, until leeks are tender, about 10 minutes. Season with salt and pepper. Meanwhile, in large saucepan of boiling salted water, cook pasta until al dente, 8 to 10 minutes. Reserving 1/2 cup cooking liquid, drain well.
In same skillet, mix cream and mustard with leeks. Add ham, pasta and enough reserved cooking water to coat well. Heat for 2 minutes. Divide among bowls; sprinkle with cheese, if desired.
