Method
In large nonstick skillet with lid, heat oil over medium heat. Add garlic; cook for 1 minute. Add turkey; cook, breaking up meat with wooden spoon, until no longer pink, about 5 minutes. Add sweet potato and 1/4 cup water; reduce heat to low. Cover and cook until sweet potato is tender, about 10 minutes.
Stir in paprika and spinach; cook, stirring only once, until spinach is wilted, about 2 minutes. Season with salt and pepper and sprinkle with goat cheese, and thyme, if using.
