Preheat oven to 400°F; line baking sheet with parchment paper. On lightly floured work surface, divide dough into 5 portions. Using rolling pin, roll out each serving into 6- to 7-inch circle. Carefully place portions on prepared baking sheet.
In large bowl, combine brown sugar and flour. Add ground cherries and toss gently to coat well. Using large spoon, divide ground cherries among centres of dough portions, leaving 1-inch border. Fold edges of dough over filling and sprinkle with diced butter. In small bowl, use fork to beat egg yolk and 1 tbsp water. Brush edges of galettes with egg mixture; sprinkle with Demerara sugar.
Bake on lower rack of oven until galettes are golden brown, about 30 minutes. Transfer baking sheet to rack and let cool for 15 minutes before serving. (Make-ahead: Can be stored in airtight container at room temperature for up to 2 days or frozen for up to 1 month.) Serve galettes hot or warm with a sprinkle of pistachios, if desired.
