Sprinkle chops with salt and pepper. Grill, covered, on greased grill or in grill pan over medium-high heat for 4 minutes. Turn chops; brush with some of the jam. Add pineapple to grill; grill, covered, turning pineapple once and brushing chops with remaining jam, until juices run clear and a hint of pink remains inside chops, about 5 minutes.Transfer pineapple and chops to plates; immediately top chops with cheese; let melt. Sprinkle with cashews. Makes 4 servings.
