Method
Preheat barbecue to medium-high heat (about 375°F); grease grill. Brush lamb chops on both sides with 1 tbsp of the oil. Sprinkle with za’atar and season with salt and pepper. Place chops on grill; close lid and cook, turning halfway through grilling time, until desired doneness, 6 to 8 minutes for medium-rare. Let stand for 5 minutes.
Meanwhile, in food processor, blend yogurt, feta, remaining oil, lemon juice and garlic until sauce is smooth. Add mint, and season with pepper, if desired. Serve lamb chops with feta sauce, and lemon wedges, if using. Sprinkle with mint leaves, if desired.
