Creamy Herb Dressing
In food processor or blender, combine 1 cup chopped fresh flat-leaf parsley, 1/2 cup each sour cream and mayonnaise, 2 tbsp white wine vinegar, 1 tbsp dried tarragon, 1 green onion cut into sections and 1 anchovy fillet, rinsed and patted dry; pulse until smooth. Season with salt and pepper. (Make-ahead: Can be covered and refrigerated overnight.) Makes about 1 1/4 cups.
