Position rack in lower third of oven; preheat to 500°F. Line baking sheet with parchment paper.
In large skillet, heat olive oil over medium heat; cook ground beef, mustard, garlic powder, paprika, salt and pepper until browned, about 4 minutes. Add chopped red onion; cook, stirring often, until softened, about 4 minutes.
Meanwhile, on lightly floured surface, divide dough in half. Press and stretch into two 11- x 8-inch ovals; transfer to prepared pan. Evenly spread with pizza sauce, leaving ¼-inch border. Top with ground beef mixture and tomato; sprinkle with mozzarella and cheddar. Bake until crusts are golden and cheese is bubbling, 12 to 15 minutes.
Top with kale (if using), pickles and sliced red onion. Serve with a green salad, if desired.
