Gougères
Preheat oven to 375°F. Line two baking sheets with parchment paper; set aside. In saucepan, bring 1 cup water and the butter to boil, stirring until butter has melted. Remove from heat. Add flour all at once; stir vigorously with wooden spoon until mixture is smooth. Return pan to stove and cook over low heat, stirring constantly, until smooth ball forms that pulls away from side of pan, about 2 minutes. Remove from heat; let cool for 5 minutes. Add eggs, one at a time, stirring well with wooden spoon after each addition, until batter is smooth and shiny. Stir in cheese; season with salt and pepper. Spoon batter into pastry bag fitted with plain round tip. Pipe 2-inch balls of dough 2 inches apart onto prepared baking sheets.
Bake, one sheet at a time, until gougères are golden and puffed, about 30 minutes. Let cool completely. (Make-ahead: Can be stored in airtight metal container at room temperature for up
to 2 days or frozen for up to 1 month. Thaw in refrigerator the day before using; reheat in preheated 350°F oven for 5 minutes.)
Herbed Salmon
Meanwhile, place salmon in saucepan and cover with cold water; season with salt and pepper. Bring to boil over medium-high heat. Reduce heat to medium and simmer for 3 minutes. Using slotted spoon, transfer salmon to paper towel-lined plate. Let cool completely; shred with two forks.
Meanwhile, in skillet, melt butter over medium heat. Add leek; cook, stirring often, until softened, about 6 minutes. Add wine; cook until wine has almost completely evaporated and leek is tender. Remove from heat; let cool completely.
In bowl, stir together shredded salmon, cooled leek, lemon zest, chives, dill and sour cream; season with salt and pepper. (Make-ahead: Can be refrigerated over-night.) Just before serving, cut gougères in half and fill with salmon mixture.
