Method

In large skillet, heat oil over medium-high heat. Add chicken and cook, breaking up meat with wooden spoon, until chicken is browned and no longer pink, 5 to 7 minutes. Add ginger and garlic; cook, stirring occasionally, for 2 minutes. Add soy sauce and almonds; cook, stirring occasionally, for 1 to 2 minutes. Transfer chicken mixture to bowl; set aside.

On large serving platter, arrange lettuce leaves, green onions, carrots and red pepper. Top lettuce leaves with chicken mixture, carrots, green onions and red pepper. Sprinkle with sesame seeds and cilantro, and drizzle with sriracha, if using.
