Method
Mango Chipotle Sauce In blender, purée espresso, chipotle peppers, mango, lime zest and juice, garlic and salt until smooth; set aside.
Fish Croquettes In bowl, stir flour with 1 tbsp of the seafood seasoning. In second bowl, beat eggs. In third bowl, stir together panko, sesame seeds, coconut, garlic powder, remaining seafood seasoning and the salt; season with pepper. Dip each piece of fish in flour, then in eggs, then in panko mixture, coating well and pressing lightly to adhere. Place 1 inch apart on large plate.
In large heavy-bottomed saucepan fitted with thermometer, heat oil over medium-low heat until it reaches 350°F. Gently add 3 croquettes and cook until golden brown, 2 to 3 minutes. Using slotted spoon, transfer croquettes to paper towel-lined plate to drain. Repeat with remaining croquettes. Sprinkle with thyme, if using, and serve with reserved Mango Chipotle Sauce.
