In large ovenproof skillet, melt butter over medium-low heat. Add endives, cut sides down; cook, turning halfway through cooking time, for 10 minutes. Sprinkle with nutmeg; season with salt and pepper. Pour in wine; cook until liquid is almost completely evaporated, 4 to 5 minutes.
Preheat oven to broil. Pour cream into skillet; top with cheese. Transfer to oven; broil until gratin is lightly browned, about 2 minutes. Sprinkle with parsley, if using.
