Brush bread with mustard. Cover half of the slices with smoked ham; top with onion and cheese. Sandwich with remaining bread.
In same skillet, heat 2 tsp (10 mL) vegetable oil over medium-low heat; cook sandwiches, pressing with spatula and turning once, until bread is crusty and cheese is melted, about 8 minutes.
