In large skillet, heat oil over medium heat. Add zucchini, garlic, curry powder, turmeric and paprika; season with salt and pepper. Cook, stirring occasionally, about 5 minutes. Add 1/4 cup water to skillet, cover and cook until zucchini is tender-crisp, stirring halfway through cooking time, about 5 minutes. Uncover skillet and add shrimp; cook, stirring often, until shrimp are pink and opaque throughout, 2 to 3 minutes. Serve with rice, if desired.
