Preheat oven to 425°F. Line baking sheet with parchment paper; set aside.
In nonstick skillet, heat oil over medium-high heat. Add onion and red pepper; cook, stirring often, for 2 to 3 minutes. Stir in chili powder and season with salt and pepper; cook, stirring often for 2 minutes. Remove from heat. Stir in pulled pork, beans and half of the Cheddar cheese.
Place 1 tortilla on prepared baking sheet; spread pork mixture over one side of the tortilla. Sprinkle with some of the remaining Cheddar. Fold over to form half-moon shape. Lightly spray with cooking spray. Repeat with remaining tortillas, pork mixture and Cheddar.
Bake on top rack of oven until quesadillas are golden and crispy, 13 to 15 minutes. Serve with salsa and guacamole, and fresh cilantro, if desired.
