Crispy Baked Quesadillas

Preheat oven to 425°F. Line baking sheet with parchment paper; set aside.

In nonstick skillet, heat oil over medium-high heat. Add onion and red pepper; cook, stirring often, for 2 to 3 minutes. Stir in chili powder and sea­son with salt and pepper; cook, stirring often for 2 minutes. Remove from heat. Stir in pulled pork, beans and half of the Cheddar cheese.

Place 1 tortilla on prepared baking sheet; spread pork mixture over one side of the tortilla. Sprinkle with some of the remaining Cheddar. Fold over to form half-moon shape. Lightly spray with cooking spray. Repeat with remaining tortillas, pork mixture and Cheddar.

Bake on top rack of oven until quesa­dillas are golden and crispy, 13 to 15 minutes. Serve with salsa and guaca­mole, and fresh cilantro, if desired.
