In saucepan, heat butter over medium-high heat until melted; cook garlic and thyme, stirring, until fragrant, about 1 minute. Pour in broth; bring to simmer and cook until slightly reduced, about 5 minutes. Stir in cream, mustard, pepper and salt. Whisk cornstarch with 3 tbsp water; add to broth mixture and cook, stirring, until thickened, about 1 minute.
Makes about 2-1/2 cups.
