Method

Place chicken thighs in large resealable bag. Add oil, vinegar, brown sugar, olives, capers, garlic and oregano. Season with salt and pepper. Close bag and knead to mix and coat chicken well. Refrigerate for at least 12 hours, shaking and turning bag a few times.

Preheat oven to 400°F. Pour chicken and marinade into 9- x 13-inch baking dish, arranging chicken in single layer. Pour wine over top.

Bake on upper rack of oven for 25 minutes. Gently stir in prunes. Continue baking until chicken is very tender, about 30 minutes. Sprinkle with chopped fresh oregano, if using.
