Method

Preheat oven to 425°F; grease 9- x 13-inch baking dish. Spread one-third of each of the celeriac, potatoes and apples in dish, overlapping them slightly. Season with salt and pepper.

In small bowl, whisk together sour cream, milk, thyme and nutmeg. Pour one-third of sour cream mixture over celeriac, potatoes and apples in baking dish. Sprinkle with one-third of the blue cheese and one-third of the Gouda. Repeat layers with remaining ingredients. Cover dish with foil.

Bake on upper rack of oven for 30 minutes. Remove foil and bake until vegetables are very tender, about 30 minutes. Place under broiler for last few minutes of baking, if desired. Let stand 10 minutes before serving. Sprinkle with chives, if using.
