Method
Preheat oven to 400°F. In large bowl, combine garlic, oil, lime zest and juice, curry powder and cumin; add cauliflower and chickpeas, tossing to mix well. Spread onto baking sheet lined with parchment paper. Bake in centre of oven for 12 minutes.
Spread bottom of each bun with 2 tbsp hummus. Layer cauliflower mixture, tomato slices, feta and mint over hummus; cap with tops of buns.
