Preheat oven to 300°F. Using paring knife, make 16 small incisions in pork loin and stuff each with garlic clove.
In Dutch oven, heat oil and butter over medium heat. Sear pork for 2 minutes on each side; season with salt and pepper. Transfer pork to plate. Spread onion and celery in bottom of saucepan; place pork on top. Pour in cider, cover and transfer to oven; cook for 3 hours. Remove lid; add apple wedges and sage leaves and baste with cooking juices. Cover and cook until pork flakes when tested with fork, about 30 minutes. Sprinkle with chopped fresh sage and serve with mashed potatoes, if desired.
