Method
Bourbon & Cherry Glaze In small saucepan, bring bourbon, brown sugar, jam and mustard to boil over medium heat, stirring often; season with salt and pepper. Remove from heat. Transfer to blender (or use handheld blender in pan); purée mixture until smooth. Set aside.
Turkey Breast Preheat oven to 350°F. Place wire rack in roasting pan; place turkey on rack. Top turkey with cubes of butter and season with salt and pepper. Add 2 cups of the broth to baking dish. Roast for 15 minutes. Brush turkey with reserved Bourbon & Cherry Glaze; roast, brushing with glaze every 15 minutes, until turkey reaches internal temperature of 165°F, about 90 minutes. (If necessary, add up to 2 more cups of broth to roasting pan, a little at a time, during roasting time.) Remove turkey from oven and tent with foil; let rest for 10 minutes. Reserve cooking juices (if juices are too thick, whisk in a little chicken broth until desired consistency and adjust seasoning). Slice turkey breast and serve with cooking juices on the side. Garnish with thyme, if using.
