Method
In large bowl, soak rice in 5 cups cold water for 30 minutes; drain.
In large pot, bring rice and 3 cups cold water to boil over high heat. Reduce heat to medium-low, cover and simmer until water is absorbed, about 10 minutes. Remove from heat; let stand, covered, for 5 minutes. Fluff with fork.
Transfer rice to baking sheet set over rack, spreading in even layer; let cool completely, stirring occasionally, about 20 minutes.
Makes 9 cups.
