Method
In saucepan, heat oil over medium heat. Add garlic; cook until fragrant, about 30 seconds. Stir in tomato paste and paprika. Add red wine, scraping browned bits from bottom of pan with wooden spoon. Add tomato and demi-glace; bring to boil. Reduce heat; simmer until liquid has reduced by half, about 5 minutes. Stir in olives and parsley. Remove pan from heat; set aside.
Divide ground beef into 4 portions. With wet hands, form 4 patties, each about 3/4-inch thick. In large skillet, melt butter over high heat. Add patties; cook, turning halfway through cooking time, until golden brown on each side, about 6 minutes.
Preheat oven to 400°F. Line baking sheet with parchment paper. Using spatula, place beef patties on prepared baking sheet. Drizzle each patty with 2 tbsp of
the reserved olive sauce, then sprinkle with cheese. Bake until cheese is melted and beginning to brown, about 8 minutes. Serve with remaining olive sauce, and sweet potato fries, if desired.

Try using a cast-iron skillet to fry the beef patties. You can place it straight into the oven instead of transferring the patties to a baking sheet.
