Method
Breaded Trout Preheat oven to 425°F and line baking sheet with parchment paper. In shallow dish, combine bread crumbs and seasoning. Place flour in separate shallow dish and lightly beat eggs in third shallow dish. Dredge trout in flour, turning to coat and shaking off excess. Dip in eggs, letting excess drip off. Dredge in bread crumb mixture, pressing to adhere.
Arrange breaded trout on prepared baking sheet and lightly spray with cooking spray. Bake until fish is golden brown and flakes easily when tested with fork, 10 to 15 minutes.
Tartar Sauce Coleslaw Meanwhile, in bowl, combine mayonnaise, dill, vinegar, capers, green onions and garlic. Reserve half of the mixture in small bowl; toss cabbage with remaining sauce to coat well.
Spread reserved tartar sauce on bottom half of buns. Top with lettuce, Breaded Trout, pickles and Tartar Sauce Coleslaw.

Baked Trout Burgers with Tartar Sauce Coleslaw
Omit bread crumbs, flour and eggs. Place trout on parchment paper-lined baking sheet, drizzle with 1 tbsp lemon juice and spray with oil. Sprinkle with seasoning and bake as directed.
