Method
Coffee Vinaigrette In bowl, whisk together espresso, vinegar, maple syrup, garlic, grainy and Dijon mustards, parsley and olive oil. Season with salt and pepper; set aside.
Salad In skillet over medium-low heat, add pancetta and cook, stirring occasionally, until golden brown, 4 to 5 minutes. Add apple wedges and cook, stirring occasionally, until apples are slightly softened, 1 to 2 minutes; set aside.
In large serving bowl, add lettuce, pancetta and apple mixture and Cheddar cheese shavings. Drizzle reserved Coffee Vinaigrette over top; toss gently to coat.
