Grease small ovenproof dish (such as cake pan, small enough to fit in air fryer basket but large enough to hold fried rice). Preheat air fryer to 375°F.
In large bowl, stir together rice, meat, peas, corn, carrots, sesame oil and sweet chili sauce. Scrape into to prepared dish; place in air fryer basket. Air fry for 5 minutes. Stir in soy sauce and eggs. Air fry for 5 minutes. Fluff with fork; divide among plates. Sprinkle with green onions.
TEST KITCHEN TIP
This recipe can also be made in a large skillet or wok. Heat the oil over medium-high heat and cook the eggs, scrambling them for 2 to 3 minutes. Push the eggs to the side and add all the other ingredients; stir and continue to fry, stirring often, for 4 to 5 minutes, or until rice grains are well separated and all ingredients are warmed through.
