This Potato Salad Recipe Is Going Viral
You need to make this easy potato salad recipe that everyone is going crazy for this summer.
Easy to make (and to bring on picnics or to potlucks), potato salad is a hot-weather staple. Now, it's been reinvented into a smashed potato dish!

Viral Smashed potato salad
Ingredients
For the potatoes:
- 2 lbs baby potatoes (cleaned)
- 1 tbsp olive oil
- Salt and pepper, to taste
For the salad:
- 3/4 cup plain Greek yogurt
- 1/2 cup Kewpie mayonnaise
- 2 tsp Dijon mustard
- 1/2 large lemon, juiced
- 2 tsp red wine vinegar
- 1 large garlic clove, minced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1 medium cucumber, seeded and finely chopped
- 1 shallot, finely chopped
Instructions
For the potatoes:
- Preheat the oven to 425°F. Prepare a baking sheet with a sheet of parchment paper.
- Boil the potatoes for 7 minutes or until tender (easily pierced with a fork). Drain and transfer to the baking sheet.
- Using a glass, smash the potatoes (use the bottom of the glass to put pressure on the cooked potatoes). Drizzle the potatoes with olive oil and season with salt and pepper.
- Bake for 50 minutes to 1 hour (or until the potatoes are golden and crispy). Reserve a few potatoes for garnish.
For the salad:
- Mix together yogurt, mayonnaise, mustard, lemon juice, red wine vinegar, garlic, dill, parsley, salt and pepper. Adjust taste if necessary.
- Add the green onion and cucumber. Cover and keep everything in the fridge.
- Once the potatoes have cooled, add them to the mixture.
- Garnish the salad with the reserved potatoes, dill and pepper. Enjoy!
