Method
Curried Yogurt Dressing: In small saucepan, melt butter over medium-low heat; stir in onion and cook until dark golden, about 4 minutes.Stir in garlic, ginger, curry powder, salt, pepper and cumin; cook, stirring, for 30 seconds. Remove from heat; stir in green onion. Let cool slightly. Stir in yogurt and lemon juice. Stir in mint. Set aside.
Toss together asparagus, oil, salt and pepper. Place on greased grill over medium-high heat; grill, turning often, until tender and slightly charred, about 7 minutes. Transfer to serving platter. Top with dressing. Sprinkle with cashews (if using).
