This gorgeous jam, often called Jewel Jam because of its ruby colour, is one of Canada's finest traditional preserves. Prepare the fruit leisurely, while sitting out in the garden under a tree.

Method
Combine the cherries and 2 cups (500 mL) of the sugar in a large preserving kettle. Bring to the boil over high heat and boil vigorously for 5 minutes, stirring almost constantly.
Stir in the gooseberries and another 2 cups (500 mL) of the sugar. Return to the boil and cook 5 minutes. Add the currants, raspberries and the rest of the sugar. Bring back to the boil again, and boil, stirring constantly, until the jam sets, about 5 to 8 minutes.
Remove from the heat, skim and stir for 5 minutes. Pour into hot sterilized jars and seal.
