How To Safely Store Leftover Rice
Rice makes for delicious leftovers—but you have to store it right.
From fried rice to risotto, this versatile grain is universally-loved dish. That said, rice can be prone to bacteria growth. Here’s how to properly store it—and how long it stays food-safe—after it’s made.
How long does leftover rice last?
You should eat your rice within three to four days otherwise it may spoil. Rice can grow Bacillus cereus, a bacteria found in soil and dust that can contaminate food during the growing, harvesting, and processing stages. When left at room temperature, rice can release toxins that can make you sick.
How to properly store your rice
To avoid any risk of bacteria, let your rice sit for 30 minutes to two hours at room temperature before storing it in the fridge. Place it in an airtight container to reduce the risk of contamination or in a bowl with cling film.
You can also freeze your rice in freezer bags or airtight containers for up to three months. When it's time to eat, defrost it in the fridge or reheat it directly in the microwave, adding a little water to prevent it from drying out. Ensure the rice is piping hot (at least 75°F) to kill any bacteria that may have developed.
