Family Meal Makeover: Mom is away, and Team Bedard make dinner
When Mom spends time away, Dad Peter Bedard is quick to order pizza for dinner. This weekend, Canadian Living Senior Food Specialist Adell Shneer comes to Peter's rescue and helps him put together quick and tasty Vegetarian Chili that the kids just love.

Preparation time: 10 minutes
Cooking time: 30 minutes
Makes: 4 to 6 portions
Ingredients
2 tbsp (30 mL) olive oil
1 onion, diced
1 carrot, diced
1 rib celery, diced
2 cloves garlic, minced
1 tsp (5 mL) each chili powder and paprika
1/4 tsp (1 mL) each salt and pepper
1/4 tsp (1 mL) hot pepper flakes (optional)
1 can (28 oz/796 mL) diced tomatoes
1 can (19 oz/540 mL) red kidney beans, drained and rinsed
Garnish:
3/4 cup (175 mL) shredded Cheddar cheese
1/2 cup (125 mL) sour cream
1/4 cup (60 mL) thinly sliced green onions
Preparation
In saucepan, heat oil over medium heat; cook onion, carrot and celery until softened, about 5 minutes.
Add garlic, chili powder, paprika, salt pepper, and hot pepper flakes (if using); cook for 2 minutes.
Add tomatoes and bring to boil; cook, stirring often, for 12 minutes. Add beans; simmer over medium-low heat until slightly thickened, about 12 minutes. (Make-ahead: Let cool for 30 minutes; refrigerate in airtight container for up to 24 hours or freeze for up to 2 weeks.)

- You can make a healthy meal from scratch in the same amount of time it takes for delivery to arrive.
- Don't add garlic at the same time as the other firmer veggies or it could burn and taste bitter.
