3 Ways To Cook Summer Squash, Plus Recipes
Take advantage of zucchini season by maximizing how you use this summer produce.
We love the slightly sweet flavour zucchini brings to our tables during the peak of summer. But sometimes the veggie gets a bad rap due to its high water content, often making dishes a little soggier than we'd like.
Try one of these three ways to cook summer squash for a guaranteed hit come dinner time.
How To Grill Zucchini
If you want to amp up the flavour of your squash, cook it on the grill. All you need to do is preheat your barbecue to about 375°F and grease the grill. Brush halved zucchini with olive oil and season with salt and pepper. Place on grill and cook, turning halfway through, 6-8 minutes. The key is to take the zucchini off while it's still slightly crisp.

How To Bake Zucchini
We love adding zucchini to meatballs, quick breads, and anything else we throw in the oven for an extra hit of veg you can barely taste. You can also try making fritters with cheese, flour, an egg and some seasonings. As long as you shred your zucchini, then squeeze it in a cheesecloth to expel the water, you'll get delicious baked goods every time!

How to Cook Spiral Cut Zucchini
We're still not over how delicious a bowl of zucchini noodles tastes mid-summer with juicy roasted tomatoes. We suggest using a spiralizer to get the perfect noodle shape, but if you don't have one, use a vegetable peeler to make "pappardelle" shaped noodles. Although you can eat your spiralized zucchini raw, a slight cook results in a deliciously sweet dish. Heat a pan to medium and add olive oil. Place noodles in pan and cook for 2-4 minutes, stirring often. Remove from heat and dab with paper towel to remove excess water.
