3-Ingredient Watermelon Ice Pops
As tempting as ice cream is at the time of year (I mean, just look at this and this) having ready-to-dig-in, healthy, cool snacks right in your freezer really helps keep a balanced diet during the summer months. These watermelon ice pops will do just that: you can make them in a matter of minutes, they're jam-packed with fresh fruit and a great snack for both kids and adults alike.
I used this ice pop mold to make them --it's incredibly inexpensive, doesn't take up too much room in the freezer and is really easy to wash. It's definitely on my summer must-have list! Watermelon Ice Pops • 4 cups chopped seedless watermelon • 2 tsp liquid honey • 10 fresh mint leaves In food processor, combine watermelon, honey and mint; puree until smooth. Pour into ice pop molds; freeze until firm, about 3 hours. Chill any remaining watermelon to enjoy as juice.
