Method

In skillet, melt butter over medium-low heat. Add shallot; cook, stirring often, for 3 minutes. Add mustard and whiskey; increase heat to medium. Let simmer until liquid is reduced by half, 3 to 4 minutes. Flambé, if desired. Add broth; let simmer until liquid has reduced by half, 3 to 4 minutes. Stir in cream; bring to boil and season with salt and pepper. Serve with Prime Rib Steaks with Porcini & Coffee Dry Rub.
